There are many lettuce varieties. Each with it's own texture and taste. 


Below I have pictures and descriptions of many of the different varieties of lettuce.


LETTUCE and GREENS

ARUGULA

A tender lettuce with a peppery taste. Nice lettuce for a mixed greens salad and goes ell with a vinaigrette. 

BIBB

A mild tasting lettuce with a tender texture similar to spinach. This is a wonderful choice of lettuce when making lettuce cups.

ENDIVE

Mildly bitter. The lisghter the leaves, the more mild the taste. Texture is firm but delicate so this makes a nice addition to a vegetable and dip platter.

FRISEE

Slightly peppery taste. Tender leaves. Best served cold. Great for a mized greens salad or use when making a pesto. 

ICEBERG

A bright crisp mild lettuce. Refreshingly hydrating. Its true that it is mostly water which makes it very hydrating for the body. Whats left are vitamins and nutrients that will be easily absorbed because of the water content. A great food! Best lettuce for a lettuce bun or lettuce cup.

KALE

A dark green hearty, leafy green. Taste is slightly more mild than spinach. A cruciferous vegetable. If you have thyroid disease limit to cooked Kale, not raw. Kale is an excellent source of calcium, Vitamin C and fiber. 

LEAF LETTUCE

Two varieties: Red Leaf and Green Leaf. Both are excellent choices for salads. Similar texture and crispiness to a Romaine.

RADICCHIO

Another variety that is great for including with dip. A beautiful lettuce. Mix this fimr crisp lettuce with other varieties for a beautiful salad. Also good in slaws. Enjoy this lettuce raw or slice in half and grill.

ROMAINE

One of the  more popular varieties, Romaine is the lettuce featured in Caesar Salad. Crisp and firm leaves also makes this a good candidate for grilling. 

SPINACH

One of the healthiest greens; cooked or raw. Breakfast, lunch, and supper. A tender, dark green leafy is a great source of Calcium, C, and fiber. 

WATERCRESS

Watercress has a strong peppery taste, similar to mustard greens. Watercress is a very tender leaf. This leetuce pairs well with sweet and sour dressings.
