This is my version of nightshade free spaghetti sauce using canned carrots and canned beets.
This sauce looks, tastes, smells, and feels like traditional tomato sauce. I love it. It is a beautiful sauce on its own, but it is especially good when you add ground beef or better yet ground Italian sausage.
This recipe is GLUTEN FREE | DAIRY FREE | SOY FREE | NIGHTSHADE FREE | EGG FREE
Blend all of the ingredients (except the parsley) in your food processor or blender until smooth. Add the parsley and oregano. Pulse just a time or two.
Taste and adjust salt, vinegar or other seasonings. It should smell just like spaghetti sauce. It should taste like spaghetti sauce with just a hint too much vinegar. This will temper when heated.
Use as you would any spaghetti sauce.
Add the tiniest bit of liquid smoke and you have the makings of a nightshade free sloppy joe.
